Why we’d go
This is Bondi's special-occasion benchmark, and we'd send anyone here for the combination you genuinely can't get anywhere else: a menu of modern Italian cooking that has held a chef's hat almost continuously since 2002, framed by a wall of glass over the famous ocean pool and the Pacific beyond. Maurice Terzini's room is polished without being stuffy, and the kitchen leans on hand-made pasta, sustainably sourced seafood and carefully chosen produce rather than gimmicks. It rewards a booking and a bit of an occasion.
What to order
Hand-rolled seasonal pasta and the sustainably sourced seafood are the signatures; the fixed-price choice set menu is the reliable way in, and vegetarian, vegan and children's menus are offered alongside the a la carte.
The atmosphere
Elegant, buzzy and light-filled, with an unbeatable outlook over the Icebergs pool and Bondi's south end.
Local tip: Book a window table for lunch rather than dinner - you'll pay similar money but get the full sweep of the pool, the beach and the surf in daylight, which is the whole point of coming here. If you can't get a table, the separate bar takes walk-ins for a cocktail and the same view.
Worth knowing: It's genuinely expensive (set menus run well over $100pp) and firmly a dress-up, book-ahead occasion rather than a casual post-beach drop-in.
